Millie's Grilled Salmon

Millie's Grilled Salmon

Ingredients:

- 4 salmon fillets (6 ounces each), skin-on

- 2 tablespoons olive oil

- 2 tablespoons lemon juice

- 2 cloves garlic, minced

- 3-4 Shakes of Millie’s Seafood Seasoning 

- Optional: Fresh herbs (such as dill, parsley, or thyme) for garnish

 

Instructions:

1. Preheat your grill to medium-high heat.

 

2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic,Millie’s Seafood seasoning This will be the marinade for the salmon.

 

3. Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the salmon, ensuring each fillet is coated. Let the salmon marinate for about 15-30 minutes at room temperature, or refrigerate for up to 1 hour for a more intense flavor.

 

4. Lightly oil the grill grates to prevent sticking. Remove the salmon fillets from the marinade, allowing any excess marinade to drip off.

 

5. Place the salmon fillets on the preheated grill, skin-side down. Close the grill and cook for about 4-6 minutes per side, depending on the thickness of the fillets. The salmon should be opaque and easily flake with a fork.

 

6. While grilling, you can baste the salmon with any remaining marinade for added flavor.

 

7. Once cooked, carefully remove the salmon fillets from the grill using a spatula. Be cautious not to break the fillets.

 

8. Let the grilled salmon rest for a few minutes before serving. This allows the juices to redistribute, resulting in a moist and flavorful fish.

Millie's Fried Chicken

Ingredients:

- 1 whole chicken, cut into pieces (or your preferred chicken parts)

- 2 cups Millie's Chicken Fry  flour

- 3-4 shakes of the 

Millie’s Garlic&Herb 

Seasoning and mix well 

Add more if desired 

- 1 cup buttermilk

- Vegetable oil, for frying

 

Instructions:

1. In a large bowl, combine the flour, Millie’s Seasoning 

Mix well to create the seasoned flour mixture.

 

2. Pour the buttermilk into a separate bowl.

 

3. Dip each chicken piece into the buttermilk, allowing any excess to drip off.

 

4. Coat the chicken piece in the seasoned flour mixture, making sure it is well coated on all sides. Press the flour onto the chicken to help it adhere.

 

5. Place the coated chicken pieces on a baking sheet or wire rack and let them rest for about 10 minutes. This allows the coating to set.

 

6. In a large skillet or deep fryer, heat vegetable oil to a temperature of 350°F (175°C).

 

7. Carefully add a few pieces of chicken to the hot oil, making sure not to overcrowd the pan. Fry the chicken in batches, if necessary.

 

8. Fry the chicken for about 12-15 minutes, turning occasionally, until it is golden brown and crispy. The internal temperature of the chicken should reach 165°F (75°C).

 

9. Once the chicken is cooked, remove it from the oil and place it on a paper towel-lined plate or wire rack to drain excess oil.

 

10. Repeat the frying process with the remaining chicken pieces.

 

11. Let the fried chicken cool for a few minutes before serving. This allows the crust to crisp up further.

Millie's Roasted Chicken

Millie's Roasted Chicken

Ingredients:

- 1 whole chicken (approximately 4-5 pounds)

- Millies’s Garlic&Herb 

Seasoning 

- 2 tablespoons olive oil or melted butter

-Tablespoon of minced garlic 

-320z Chicken stock 

 

Instructions:

1. Preheat your oven to 425°F (220°C).

 

2. Remove any giblets from the chicken cavity and pat the chicken dry with paper towels.

 

3. Season the chicken generously with Millie’s Seasoning , both inside and out. If desired,for added flavor.

 

4. Truss the chicken by tying its legs together with kitchen twine. This helps the chicken cook evenly.

 

5. Place the chicken on a rack in a roasting pan, breast side up. Drizzle olive oil or melted butter over the chicken, rubbing it all over the skin.

 

6. Place the roasting pan in the preheated oven and roast for about 20 minutes per pound, or until the internal temperature reaches 165°F (75°C) when measured with a meat thermometer inserted into the thickest part of the thigh without touching the bone.

 

7. Once the chicken is cooked, remove it from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, resulting in a juicier chicken.

 

8. Carve the chicken and serve with your favorite side dishes. Enjoy!

Millie's Shrimp Scampi

Ingredients:

- 1 pound (450g) large shrimp, peeled and deveined

- 4 tablespoons butter

- 4 tablespoons olive oil

- 4 cloves garlic, minced

- 1/4 teaspoon red pepper flakes (optional, for a spicy kick)

- 1/4 cup white wine (such as dry white wine or chicken broth)

- 2 tablespoons freshly squeezed lemon juice

- 3-4 Shakes of Millie’s Seafood Seasoning 

Add more if desired 

- 2 tablespoons chopped fresh parsley

- Lemon wedges, for serving

- Cooked pasta or crusty bread, for serving

 

Instructions:

1. In a large skillet, melt the butter and heat the olive oil over medium heat.

 

2. Add the minced garlic and red pepper flakes (if using) to the skillet. Sauté for about 1 minute until the garlic becomes fragrant, being careful not to burn it.

 

3. Add the shrimp to the skillet and cook for 2-3 minutes, or until they turn pink and opaque. Flip the shrimp halfway through cooking to ensure even cooking on both sides.

 

4. Remove the cooked shrimp from the skillet and set them aside on a plate.

 

5. Increase the heat to medium-high and add the white wine and lemon juice to the skillet. Let the mixture simmer for about 2 minutes, allowing the alcohol to evaporate and the flavors to meld.

 

6. Reduce the heat to low and return the cooked shrimp to the skillet. Stir to coat the shrimp in the sauce.

 

7. Season the shrimp scampi with Millie’s Seafood seasoning to taste. Remember to taste the sauce before add more if needed.

 

8. Sprinkle the chopped parsley over the shrimp scampi and stir to incorporate.

 

9. Remove the skillet from the heat and serve the shrimp scampi immediately with lemon wedges on the side.

 

10. Shrimp scampi can be enjoyed on its own as an appetizer or served over cooked pasta for a main course. It also pairs well with crusty bread for dipping in the flavorful sauce.
